The amount of cacao in dark chocolate can vary widely depending on the maker and country of origin. At Vosges Haut-Chocolat, we work with three proprietary blends: 62%, 72%, and 82% cacao.
Our chef selects the ideal cacao profile to enhance each recipe—like 72% in our Black Salt Caramel Chocolate Bar or 62% in our Manchego and Cherry Chocolate Bar—for a perfect harmony of boldness, delight, and complexity. Every creation is crafted with intention and layered to create an immersive taste experience.
Is dark chocolate healthy?
Dark chocolate contains cacao, which is rich in flavonoids and antioxidants. There is ample evidence that the compounds in cacao may help reduce inflammation and improve blood flow, among other health benefits. But the perks of dark chocolate go beyond nutrition.

Do you offer vegan dark chocolate?
Yes, we offer a curated collection of vegan dark chocolate confections, including dark chocolate truffles and dark chocolate bars, crafted without animal products. You’ll find the same signature flavor profiles and ingredient storytelling in these offerings, made for those who seek luxury without compromise.
Please be aware that our vegan chocolate bars are processed on equipment that also processes milk, soy, wheat, eggs, peanuts, sesame, and tree nuts. We thoroughly clean equipment between processing.
How should I store dark chocolate?
To preserve the full flavor and texture of your dark chocolate, store it in a cool, dry place between 60–70°F, away from sunlight and strong odors. Avoid the refrigerator or freezer, as moisture and cold can dull the chocolate’s aroma and cause blooming (those harmless white streaks on the surface). If you must chill it, bring the chocolate back to room temperature before unwrapping to allow the flavors and aromas to fully open.
